In Which All You Need is a Good Avocado

Hello all! Sorry about the short absence—the holiday season always gets the best of me. I hope all of you enjoyed your Thanksgivings with your loved ones and plenty of good food. That’s what the holidays are all about, right? Anyways, with the holiday season now in full force I’m sure many of you are finding yourselves invited to parties and potlucks galore. Thanks to a college friend, I discovered a very simple and delicious recipe for black bean and avocado tostadas. They are always a hit at every gathering and SO easy to make. The best part? Absolutely no meat, but plenty of protein and flavor that will keep you satisfied.

 Ingredients:

 -1 and 1/2 tbsp cumin
-2 tbsp wine vinegar
-6 tbsp olive oil
-2 16-ounce cans black beans (rinsed)
-1/2 cup sundried tomatoes in oil
-2 avocados
-3 scallions chopped
-pack of small corn tortillas*
-vegetable oil*

Directions:

-Combine first three ingredients.

-Separately, combine beans, tomatoes, and avocados.

-Mix in chopped scallions and cumin mixture.

-Fry tortillas in oil.*

*This dish is just as tasty should you choose to forego frying tortillas and buy a package of tostada shells (or even tortilla chips!) at the store. I promise I won’t tell and that you will not receive any complaints because the avocado and bean dip is that amazing.
